Celebrity Cookie Recipes- Danny Trejo

This cookie dough came together really nicely and didn’t need to chill which was very convienent. To make sure we end up with a very smooth dough, we want to sift together all our dry ingredients. One at a time we should be sifting our flour, cocoa powder, cream of tartar, baking soda and salt. You’ll see after sifting everything you’re left with a couple little bits and pieces. Either take a spoon and swirl it to get most of your ingredients through the sieve or discard.

The quality of cocoa we use for our recipes will make a big difference! We want to be using dutch processed cocoa powder. This type of cocoa powder is treated with an alkaline to reduce the acidity of the cocoa powder. Leaving it with a mild and smooth taste. This powder is also darker which gives us that nice rich chocolate colour. Natural cocoa powder tends to be a bit bitter but will work with this recipe as well!
