ROYAL PALACE SHORTBREAD COOKIES
I’ll first start off by saying, be careful with the flour to butter ratio. When adding your flour, make sure to do it slowly and not all at once. This recipe seemed to have a little too much flour or dry ingredients compared to butter. This could be due to flour differences from Canada to the UK. But just keep an eye on your dough and stop adding the flour when you see that your dough is done. It’s not by a lot but roughly ¼ cup or less.
Our cookies looked like they were cracking on the top a little bit but after baking they turned out just fine and held together perfectly. Overall, I would prefer to make these cookies a little thicker and a little smaller, to really have that shortbread feel. But, the taste is absolutely delicious. The Queen really knew the best of the best.
