TAYLOR SWIFT'S CHAI TEA COOKIES
One thing we love about a cookie is how easy they come together. This dough in particular was very simple and easy to work with as it has a softer consistency compared to others. This recipe calls for a stand mixer with a paddle attachment but today we used a hand mixer and it worked just as well. When adding flour to the wet ingredients, the hand mixer tends to be harder to use as the dough becomes thicker. This style of cookie didn’t make for a thicker dough. Meaning if you don’t have that stand mixer, you can still make these cookies great!
The best way to make consistent sized cookies is an ice cream scoop (or scale). Whatever works for you. In our case, we are experimenting and having a little more fun with it, so an ice cream scoop is perfect for us. Calling all home bakers, if you don’t have an ice cream scoop for baking cookies, add it to your Christmas list. Measuring out the cookies will help with an equal bake throughout the whole batch. You don’t want to have a mix of underbaked, overbaked and perfect cookies. Not only is it helpful to have equal scoops, it makes the process quicker and keeps your hands cleaner.
This recipe gives you two options when scooping the cookies. For a larger cookie use 2 tbsp (tablespoons) of dough and for a smaller cookie use 1 tbsp. We wanted larger cookies and opted for the 2 tbsp scoop. After baking, it ended up spreading to about 3 inches in diametre, without completely flattening and staying very fluffy.
